After completing the Compagnon des devoirs du Tour de France, Xavier, with the help of his wife Valerie, opened their bakery in the town of Mouleydier, in southwest France, in August 1991. After falling in love with Indian Rocks Beach, the couple, along with their son Luigi, decided to make the big move and bring an authentic artisan French bakery to the so-loved area.
